Restaurante Tortilla Casserole

7 Plum tomatoes, cut into quarters
1⁄4 Cup canola oil
1 Bag of Old Dutch Arriba Tortillas Chips
4 pork or beef chorizo
Water
1 Tbsp fresh oregano
2 Tbsp fresh cilantro
6 Canned chipotle chile in adobo sauce
1 Tbsp canola oil
1 Jalapeño, seeded
5 Garlic cloves
1 Medium white onion, quartered
Can of beans (if desired)
Preheat the oven to 425.
Place tomatoes, onion, garlic and jalapeno on a cookie sheet, and drizzle with canola oil.
Lightly toss and bake for 60 minutes, stirring halfway through.
Once the mixture has cooled, place mixture into a food processor.
Add the chipotle chiles, cilantro, oregano and water.
Process until well blended. Set aside.
Remove the casings from the chorizo.
Crumble the meat into a saucepan, then cook over medium-low for 6 – 8 minutes.
Add the sauce and stir. Lower heat, and simmer for 30 minutes.
Preheat oven to 350.
Place Old Dutch Arriba Tortillas onto a cookie sheet pour the sauce over the top.
Gently mix with a spatula and bake for 15 minutes.
