Dutch Brunch Quiche Cups


1½ cups finely ground Old Dutch Rip-L Chips

¼ cup butter or margarine melted

4 eggs slightly beaten

1 cup milk

1½ cup cooked broccoli

1½ cups grated cheese

Salt and pepper

Cherry tomatoes sliced


1. Preheat oven to 350 degrees

2. Grease miniature muffin tin.

3. Finely grind chips in a food processor, add melted butter in a bowl then press into the bottom of each muffin tin.

4. Combine eggs, milk, broccoli, 1 cup of cheese, salt and pepper in a bowl then pour mixture over the crust

5. Place sliced cherry tomatoes on top and sprinkle with remaining cheese

6. Bake for 15-20 minutes.
