Old Dutch Eggs and Chips

1 tbsp vegetable oil
1 small onion, finely chopped
1 garlic clove, minced
2 or 3 fresh green arbol, Thai, or serrano chiles, finely chopped
4 large handfuls of Old Dutch Jalapeño and Cheddar crushed chips
3 or 4 eggs
Kosher salt
?1/2 cup chopped cilantro

Preheat oven to 350 degrees. Heat oil in a frying pan (preferably cast iron) over medium heat. Add onion and cook, stirring occasionally, until softened, then stir in garlic and chiles. Cook until garlic is soft. Add in Old Dutch, and stir to combine.
Make 3–4 craters in the surface of the mixture and crack an egg into each. Place pan in the oven and bake for 15 mins. Season with salt, and top with cilantro.
